Coca-Cola Cake
It’s Friday, March 20, about one week since widespread panic has gripped our country. There had been some panic shopping going on for a few weeks prior (toilet paper anyone?!), but it’s really been just this past week that all-out craziness has let loose.
Yesterday evening the Governor shut down our entire state. Only essential services are to be open and operating, and at least that does include the grocery stores. So I went ahead and ventured out today to try and get a few more staples. I drove by Costco, which I knew was going to be a long shot, but thought I could make it work. They had partitioned off most of the parking lot near the entrance, and had a line wrapped around the store to get in. My only guess was because they were only letting in so many people at a time? I didn’t stay to find out however. I love shopping at Costco and love their prices, but in this crisis I have just accepted we will have to pay more.
I ended up driving down to Smart and Final, which if you know has remodeled their stores into more of a grocery store model in the past few years. They still offer warehouse size offerings of many things, which is why I ended up with a 50 lb. bag of flour, the smallest they had! I’m checking with the neighbors to see if they need any as well. wink-wink
I couldn’t really believe how empty the store was. Not people wise – there were plenty of people there. And employees trying to stock as fast as humanly possible. But the shelves were just… bare. I think it would be faster to list what they had left instead of what they were out of. No eggs, pasta, rice, bread, dry beans, heavy cream, sour cream, all fresh meat… and I didn’t even attempt to look at the toilet paper situation. They were trying to stock canned goods while I was there, and I was able to grab two cans of refried beans, the limit allowed. There was only a few bottles of vegetable oil left, most of the cereal and granola bars were gone, and there was only one package of Danishes left in the bread aisle, which I grabbed. grin
Can I finally get to the point of this post already??? ha ha Do you know how much you can do with a box of cake mix? From cookies to all sorts of desserts, the possibility is endless. So when you’re finding yourself needing a treat during this craziness, but you have no eggs or oil, but you found that lone box of cake mix in the far reaches of your pantry, go ahead and make this cake. It comes out moist and delicious.
Coca-Cola Cake 1 Box Cake Mix, any flavor, though Chocolate works extremely well 1 12 oz. can Coca-Cola Mix and bake as directed.
That’s it! No frosting? No problem, just dust with powdered sugar! Or it really doesn’t need anything. Stay sane out there everyone, and enjoy some Chocolate Cake!
